Tzatziki bowl with grilled vegetables

Cooking instructions

  1. First we put the potatoes in the oven, seasoned (olive oil, salt, pepper, smoked paprika) for 15 minutes at 190 C.
  2. Then broccoli, peppers and onions. The chickpeas go together and to make them crispy and cheesy I sprinkle them with Daily Spoon yeast flakes and olive oil. I pop them in the oven for another 15 minutes.
  3. For the sauce, grate the cucumber and mince the garlic. Mix with the other sauce ingredients. Serve and enjoy!

A light lunch or dinner that is rich in fibre and protein and, of course, tasty. This time I have chosen chickpeas as the protein source, but you could use beans or chicken.

Ingredients

  • 2-3 potatoes
  • Half a broccoli
  • 1 paprika
  • Half a red onion
  • 400 g canned chickpeas
  • To taste: olive oil, salt, pepper, smoked paprika
  • Spoonful Daily Spoon yeast flakes

For Tzatziki sauce:

  • Half a cucumber
  • 2 cloves of garlic
  • 3 tbsp Greek yoghurt
  • 2 tbsp olive oil
  • To taste: salt, pepper and chilli flakes
