How can we let the autumn pass without sharing a single recipe with pumpkins? We can’t. So, I’m sharing a quite nutritious waffle recipe with a little more sugar. But, you know, sometimes it’s allowed 🤭
Ingredients
200 g | Oat flour |
150 ml | Almond milk |
100 ml | Melted coconut oil |
3 tablespoons | Maple syrup |
130 – 150 g | Pumpkin puree |
½ teaspoon | Salt |
1 teaspoon | Cinnamon |
½ teaspoon | Ginger |
¼ teaspoon | Grated nutmeg |
3 | Eggs |
¼ teaspoon | Ground cloves |
Pinch | Pepper |
Cooking instructions

In a pot, mix all the dry ingredients.

Then, in another pot, whisk the eggs and add all the wet ingredients.

Gently combine the dry and wet ingredients and let it sit for 5 minutes.

Put the batter onto a preheated and oiled waffle iron and cook until nicely browned. Serve with maple syrup, fruits, and nuts.
