Shrimp Tacos with Mango Salsa and Creamy Guacamole

For Mango Salsa: | |
1 | Bell pepper |
Half | Cucumber |

Marinated Onions: Finely slice 1 red onion, place it in a small bowl along with 2 tablespoons of sugar and 2 teaspoons of salt. Pour in 1/3 cup of vinegar and then 2/3 cup of hot water to cover all the onions. Let it sit for at least an hour.

Creamy Guacamole: To a blender, add 3 avocados, 1 tablespoon of Greek yogurt or sour cream, 2 tablespoons of olive oil, juice of 1 lime, salt, and pepper. Blend everything until smooth.

Mango Salsa: Finely chop a bell pepper, half a cucumber, ripe mango, cherry tomatoes, fresh chili (seedless), and calendula leaves (optional). Don’t skimp on salt, pepper, and lime juice.

Shrimp: Marinate raw, large shrimp (about 300g) with your favorite spices. I used smoked paprika, curry, a touch of soy sauce, olive oil, and chili flakes. Cook them on a high heat skillet for about 2 minutes on each side or on a grill.

Warm up a tortilla in a skillet or on a grill until slightly golden. Then, assemble the ingredients: guacamole, lettuce leaves, salsa, shrimp, and marinated onions. Enjoy!
