Broccoli salad with creamy dill dressing

Cooking Instructions

  1. Into the bowl go: one cup of cooked bulgur, roasted corn (you can use fresh corn on the cob or canned), cucumber, and finely chopped broccoli.
  2. For the dressing: a generous handful of dill, one garlic clove, juice of half a lime, a handful of cashews, half a cup of plant-based milk, one teaspoon of mustard, salt, and pepper. Blend everything until creamy. If the dressing is too thin, add more cashews; if too thick, add a little more milk.
  3. Mix the dressing in and add your preferred protein: feta, chickpeas, or my favorite option — well-seasoned and oven-roasted chicken. Enjoy!

For the salad:

  • 1 cup bulgur
  • 1 ear of corn or 1 can of corn
  • Optional: chicken / feta / chickpeas

For the dressing:

  • A handful of dill
  • 1 garlic clove
  • Juice of half a lime
  • A handful of cashews
  • Half a cup of plant-based milk
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • A handful of grated Parmesan
  • A little extra dill
