This is the most delicious salad dressing. No questions about it.
Ingredients
For the salad:
- 1 cup bulgur
- 1 ear of corn or 1 can of corn
- Optional: chicken / feta / chickpeas
For the dressing:
- A handful of dill
- 1 garlic clove
- Juice of half a lime
- A handful of cashews
- Half a cup of plant-based milk
- 1 teaspoon mustard
- Salt and pepper to taste
- A handful of grated Parmesan
- A little extra dill
Cooking Instructions
- Into the bowl go: one cup of cooked bulgur, roasted corn (you can use fresh corn on the cob or canned), cucumber, and finely chopped broccoli.
- For the dressing: a generous handful of dill, one garlic clove, juice of half a lime, a handful of cashews, half a cup of plant-based milk, one teaspoon of mustard, salt, and pepper. Blend everything until creamy. If the dressing is too thin, add more cashews; if too thick, add a little more milk.
- Mix the dressing in and add your preferred protein: feta, chickpeas, or my favorite option — well-seasoned and oven-roasted chicken. Enjoy!
