Pasta can be really nutritious, and this one isn't just nutritious, it's delicious. The fibre and eye-catching green colour comes from the spinach, and the satiating protein from the beans. It may seem an odd combination for a sauce, but I promise it is super creamy and rich in flavour.
Cooking instructions
- I cover the spinach with boiling water and simmer for about 5 minutes. I drain the water and here it is important to remember to squeeze out the remaining liquid.
- I fry the garlic in the oven for 15 minutes to give it more umami flavour.
- Blend the spinach, beans, garlic, cheese, lemon juice and zest, oil and spices.
- Heat the mixture in a pan, adding about half a glass of water from the boiling pasta. Add the water a little at a time until you have a creamy sauce consistency. Mix everything with the cooked pasta.
