Sweet potato with tuna and avocado filling

Compound carbohydrates, some greens, protein from the tuna on top and good fats from the avocado and oil – just a couple of ingredients and you have a very delicious and simple lunch.
INGREDIENTS
1 | Sweet potato |
1 pack | Tuna |
1 | Avocado |
Half | Red onion |
Half | Lemon/lime juice |
Tablespoon | Mayonnaise |
To taste | Olive oil, salt, pepper |
Handful | Spinach or rucola |
On top | Favourite greens like chives, dill or parsley, chilli flakes and your favourite oil |
Instructions

I cut the sweet potato in half, add salt and pepper and bake for 30 – 40 minutes depending on the size (until a fork sticks in easily), 190 C.

For the filling: mash the tuna with a fork, the ripe avocado, a finely chopped red onion, half a lemon/lime juice, a teaspoon of mayonnaise (not necessary, but it adds a little umami flavour), salt, pepper and a good quality olive oil.

On the baked potato I add greens like spinach or rocket and tuna filling. On top you can add your favourite greens like chives, dill or parsley, chilli flakes and your favourite oil. Enjoy!
