Zucchini/broccoli pancakes with greens and feta

Cooking instructions

  1. Grate the zucchini and squeeze out the excess water.
  2. Add all the remaining ingredients and gradually mix in the flour until the batter is easy to shape into fritters.
  3. Fry on medium heat for about 5 minutes on each side or until they turn golden brown.
  4. Serve with tzatziki – enjoy!

Ingredients

For 2-3 pancake servings:

  • 1 zucchini
  • Half a broccoli (boil for 8 min)
  • A handful of parsley and dill
  • 150g feta cheese
  • 2 eggs
  • 1 teaspoon lemon zest
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3/4 cup chickpea (or wheat) flour

Tzatziki:

  • 300g Greek yogurt
  • Half a grated cucumber (drain excess water)
  • 1 garlic clove, minced
  • 2 tablespoons lemon juice
  • Olive oil, salt, and pepper to taste
