Chicken salad with parmesan and lemon dressing

Ingredients

  • 1 chicken breast
  • For the marinade garlic, salt, pepper, olive oil
  • Romaine lettuce as you like
  • A small handful of grated Parmesan
  • Spoonful of olive oil
  • 2 tablespoons lemon juice
  • A teaspoon of grated lemon peel
  • Salt and pepper as needed

Cooking instructions

  1. Marinate the chicken with crushed garlic, olive oil, salt and pepper for at least one hour. Preferably overnight. Then bake for 30 – 35 minutes at 190 C.
  2. Chop the romaine lettuce. Place a small handful of grated Parmesan cheese, a tablespoon of olive oil, two squeezes of lemon juice, a teaspoon of lemon zest, salt and pepper. Toss them together while massaging.
  3. Slice the chicken and serve with the salad. Enjoy!
