Green pasta with Parmesan cheese

Cooking instructions

  1. I cover the spinach with boiling water and simmer for about 5 minutes. I drain the water and here it is important to remember to squeeze out the remaining liquid.
  2. I fry the garlic in the oven for 15 minutes to give it more umami flavour.
  3. Blend the spinach, beans, garlic, cheese, lemon juice and zest, oil and spices.
  4. Heat the mixture in a pan, adding about half a glass of water from the boiling pasta. Add the water a little at a time until you have a creamy sauce consistency. Mix everything with the cooked pasta.

Pasta can be really nutritious, and this one isn't just nutritious, it's delicious. The fibre and eye-catching green colour comes from the spinach, and the satiating protein from the beans. It may seem an odd combination for a sauce, but I promise it is super creamy and rich in flavour.

Ingredients

  • 4 handfuls of fresh spinach
  • Half a can of white beans
  • 200g pasta (approx. 100g per person)
  • 4 cloves of garlic
  • A handful of grated Parmesan (or Daily Spoon yeast flakes for a vegan version)
  • Juice and zest of half a lemon
  • Salt and pepper to taste, chilli flakes
  • 2 tablespoons virgin olive oil
