Cooking instructions:
- Dry the cod, season it with salt, pepper, and oil, and set it aside
- In a baking dish, place the sliced fennel, tomatoes, garlic, and capers. Sprinkle with salt, drizzle with a bit of oil, and bake at 190°C (375°F) for about 20 minutes.
- Once the vegetables are cooked, place the cod on top, add lemon wedges, sprinkle with oregano and salt, and return to the oven for another 15 minutes. Serve with fresh basil and roasted potatoes. Enjoy!
