A simple, light and nourishing way to cook fish without turning on the oven. It takes just 20 minutes, and you’ll have the most delicious dinner on the table.
Ingredients
- 1 cod fillet
- 4 garlic cloves
- A small piece of ginger — preferably fresh and grated, or ⅓ tsp ground ginger
- Salt, pepper and chilli flakes, to taste (optional)
- ½ lemon, cut into cubes
- 250 ml full-fat coconut milk
- Fresh dill, to taste
- Optional: courgette and/or bell pepper, bulgur or your favourite grains
Cooking Instructions
- Heat the olive oil in a pan and add the garlic. Make sure it doesn’t brown. Immediately add the ginger, lemon and peppercorns (I used whole peppercorns).
- Add the cod to the pan (pat it dry and season with salt and pepper first) and pour in the coconut milk. Make sure the fish is at least half-covered, so it’s best to use a smaller pan. Season with additional salt and chilli flakes to taste.
- Let it simmer over medium heat for 15 minutes.
- The fish should flake easily when tested with a fork. Top with fresh dill.
- Serve over your favourite grains with roasted vegetables. Squeeze the softened lemon over the fish before serving. Enjoy!
