A light lunch or dinner that is rich in fibre and protein and, of course, tasty. This time I have chosen chickpeas as the protein source, but you could use beans or chicken.
Ingredients
- 2-3 potatoes
- Half a broccoli
- 1 paprika
- Half a red onion
- 400 g canned chickpeas
- To taste: olive oil, salt, pepper, smoked paprika
- Spoonful Daily Spoon yeast flakes
For Tzatziki sauce:
- Half a cucumber
- 2 cloves of garlic
- 3 tbsp Greek yoghurt
- 2 tbsp olive oil
- To taste: salt, pepper and chilli flakes
Cooking instructions
- First we put the potatoes in the oven, seasoned (olive oil, salt, pepper, smoked paprika) for 15 minutes at 190 C.
- Then broccoli, peppers and onions. The chickpeas go together and to make them crispy and cheesy I sprinkle them with Daily Spoon yeast flakes and olive oil. I pop them in the oven for another 15 minutes.
- For the sauce, grate the cucumber and mince the garlic. Mix with the other sauce ingredients. Serve and enjoy!
