If I have about 30 minutes for lunch, I make a big pot of hearty salad. This time, it's my version of Waldorf Salad. Fresh, crunchy, and as always – nutritious 🥬
Ingredients
- Romaine lettuce, spinach, or any other favorite greens
- Celery stalks
- Half a cucumber
- Half an apple
- Half a red onion
- A handful of dill
- Half a grilled chicken breast
- A handful of walnuts
For the dressing:
- 2 tablespoons Greek yogurt
- 1 teaspoon mustard
- Olive oil
- Juice of half a lemon
- Salt, oregano
Cooking instructions
- Chop everything finely, add the dressing ingredients directly onto the salad, mix, and enjoy ☀️
