If I have about 30 minutes for lunch, I make a big pot of hearty salad. This time, it's my version of Waldorf Salad. Fresh, crunchy, and as always – nutritious 🥬

Ingredients

  • Romaine lettuce, spinach, or any other favorite greens
  • Celery stalks
  • Half a cucumber
  • Half an apple
  • Half a red onion
  • A handful of dill
  • Half a grilled chicken breast
  • A handful of walnuts

For the dressing:

  • 2 tablespoons Greek yogurt
  • 1 teaspoon mustard
  • Olive oil
  • Juice of half a lemon
  • Salt, oregano
