Ingredients
For 2-3 pancake servings:
- 1 zucchini
- Half a broccoli (boil for 8 min)
- A handful of parsley and dill
- 150g feta cheese
- 2 eggs
- 1 teaspoon lemon zest
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 3/4 cup chickpea (or wheat) flour
Tzatziki:
- 300g Greek yogurt
- Half a grated cucumber (drain excess water)
- 1 garlic clove, minced
- 2 tablespoons lemon juice
- Olive oil, salt, and pepper to taste
Cooking instructions
- Grate the zucchini and squeeze out the excess water.
- Add all the remaining ingredients and gradually mix in the flour until the batter is easy to shape into fritters.
- Fry on medium heat for about 5 minutes on each side or until they turn golden brown.
- Serve with tzatziki – enjoy!
