Tacos with salmon and mango salsa

Cooking process

  1. Cook the fish of your choice in your favourite way. Whether pan-fried or stewed in the oven.
  2. Mash the avocados with salt, the piriras and a squeeze of lime juice.
  3. Finely chop all the mango salsa ingredients and mix together.
  4. Put all the ingredients on the scone and taste. Enjoy!

Tacos are one of the most popular dishes on Daily Spoon. Why is that? It's fun to make, the ingredients can be varied to suit your taste, it fits perfectly in a lunchbox and, most importantly, it's the epitome of a complete meal. This time I'm sharing my favourite variation.

Ingredients

  • Protein: salmon or your favourite fish
  • Good fats and carbohydrates: avocados with lime, salt and pepper
  • Vitamins and fibre: mango salsa – cucumber, mango, red onion, coriander, capsicum, chilli and lime juice
  • For the base: wholemeal tacos with seeds
