This meal planning series is for those who want to eat fresh, nutritious food but, like me, don’t want to spend hours in the kitchen after work.
Ingredients
Salmon Marinade:
- 1 tsp mustard
- 1 tsp honey
- 2 tbsp olive oil
- Oregano and salt, to taste
Chicken Marinade:
- 4 tbsp soy sauce
- 1 tbsp tomato paste
- 2 tsp brown sugar
- 1 tsp sweet or smoked paprika
- Salt and pepper, to taste
Chickpea Seasoning:
- Salt and pepper, to taste
- 1 tsp smoked paprika
- Chilli flakes, to taste
- 2 tbsp olive oil
- 2 tbsp Daily Spoon nutritional yeast flakes (adds a cheesy flavour and extra crunch)
My three favourite marinades for protein that will give your dishes an extra burst of flavour without much effort.
Cooking instructions
- Salmon: Mix mustard, honey, olive oil and oregano in a bowl. Season the salmon with salt, pour over the marinade and seal in a container. Marinate for at least 1 hour.
- Chicken: Mix soy sauce, tomato paste, brown sugar, and sweet or smoked paprika in a bowl. Pour the marinade over the chicken and seal in a container. For the best flavour, marinate for at least 24 hours.
- Chickpeas: There’s no need to marinate chickpeas — just make sure to season them well with spices before roasting.
