Sweet potato with tuna and avocado filling

A simple, easy and nutritious way to cook fish without cooking it in the oven. In just 20 minutes, you’ll have the tastiest dinner on your table.
INGREDIENTS
1 piece of | Cod |
4 cloves | Garlic |
Small piece of | Ginger: preferably a small piece of fresh (grated) or 1/3 teaspoon of allspice |
To taste | Salt, pepper, chilli flakes (optional) |
Half of | Lemon, diced |
250 ml | Coconut milk (thick) |
To taste | Fresh dill |
Additionally | Zucchini and/or paprika, bulgur or other grains of your choice |
Instructions

Add the olive oil to the hot pan then add the garlic ( they shouldn’t turn brown). Toss in the ginger, lemon and pepper (I used unground).

Place the cod in a pan (drain and season with salt and pepper beforehand) and pour in the coconut milk. It is important that it covers the fish at least halfway, so it is better to use a smaller pan. Add more salt and chilli flakes to taste.

Leave to simmer for 15 min on medium heat.

The fish should tear easily when taken with a fork. Top with dill.

Serve on your favourite grain and with roast vegetables. Squeeze the stewed lemon over the fish. Enjoy!
