2 – 3 | Paprika (I suggest thinner and elongated paprikas, they have more flavour) |
Half of | Red onion |
Tablespoon | Olive oil |
To taste | Pepper, salt, smoked paprika |
Tablespoon | Daily Spoon yeast flakes |
2-3 cloves | Garlic |
Few tablespoons of | Quinoa |
Handful of | Rucola |
For the dressing: | |
Tablespoon | Balsamic |
Few tablespoons of | Olive oil |
A teaspoon of | Mustard |
To taste | Salt and chilli flakes |

Put everything in a pan and bake at 190 C for 20 minutes

For the dressing, mix the olive oil, balsamic vinegar, a teaspoon of mustard, salt and chilli flakes to taste.

When the vegetables are roasted, remove the garlic cloves and finely chop them and add them to the sauce.

Add a few tablespoons of cooked quinoa, rucola and sauce to the pan. Enjoy!
