I tried viral potato salad. I liked it – so I am sharing my version. This salad is a super side dish. Or if you add a protein source like smoked salmon, you’ve got yourself a full meal.

10 | Young, small potatoes |
Few spoons of | Extra virgin olive oil |
1 | Cucumber or freshly pickled cucumbers also works |
Half | Red onion |
Lots of | Dill and, if you want add additional parsley, chives |
Dressing: | |
5 generous spoons of | Greek yoghurt |
Half | Lemon juice |
1 | Garlic |
Few spoons of | Extra virgin olive oil |
If you want | Salt, pepper, chilli flakes |

Boil the potatoes until a fork easily pierces them, about 30 minutes. They shouldn’t be fully cooked. Once removed, flatten them on baking paper, drizzle with oil and salt, and place in the oven until the edges are nicely browned. About 25 minutes at 190°C

Slice the other ingredients, blend them with the sauce, and mix in the roasted potatoes. Enjoy!
