Delicious tomato soup

I especially like to think about how I can make certain dishes slightly more nutritious, so that I can get more essential nutrients in one go. Here, I am sharing my combination for tomato soup. I promise, it will be one of the simplest and most delicious soups you can make!

According to the needs: | Basil, parsley, smoked paprika, balsamic vinegar |
400g | Canned tomatoes |
500ml | Vegetable broth |
Half a cup | Regular or oat milk |
Handful | Spinach |
1 can | Canned beans |

Preheat the oven to 200°C and bake the vegetables for 20 minutes. Place them in a pot and add 400g of canned tomatoes and 500ml of broth.

Bring to a boil and simmer for 10-15 minutes. Then, blend everything well and pour in half a cup of regular or oat milk for creaminess. Stir in the spinach.

While the soup is boiling, season the canned beans with salt, pepper, smoked paprika, and bake them in the oven for 15 minutes at 190°C.

Pour a portion of the soup into a bowl and add the beans. You can garnish with seeds or nuts and drizzle with olive oil. Enjoy!
