3 Sweet potatoes
Splash Olive oil (for roasting)
Few pinches Salt and pepper
For the filling:
1 can Butter beans
1 can Tuna
Bit Onion
1 tablespoon Olive oil
3 tablespoon White wine vinegar
1 tablespoon Capers
Handful Grated parmesan cheese
Bit Dill
Few pinches Salt and pepper
Pinch Black pepper
Pinch Red pepper flakes

 

Instructions

Make deep cuts along the sweet potatoes. Roast them generously drizzled with oil and a little salt at 180°C (with convection) / 200°C (without convection) in the oven for 1 hour.

Mix the filling ingredients together. Lightly mash the insides of the roasted sweet potatoes with a fork and stuff them with the filling.⁠ Enjoy!
