Ingredients
3 | Sweet potatoes |
Splash | Olive oil (for roasting) |
Few pinches | Salt and pepper |
For the filling: | |
1 can | Butter beans |
1 can | Tuna |
Bit | Onion |
1 tablespoon | Olive oil |
3 tablespoon | White wine vinegar |
1 tablespoon | Capers |
Handful | Grated parmesan cheese |
Bit | Dill |
Few pinches | Salt and pepper |
Pinch | Black pepper |
Pinch | Red pepper flakes |
Instructions

Make deep cuts along the sweet potatoes. Roast them generously drizzled with oil and a little salt at 180°C (with convection) / 200°C (without convection) in the oven for 1 hour.

Mix the filling ingredients together. Lightly mash the insides of the roasted sweet potatoes with a fork and stuff them with the filling. Enjoy!
